HOME

Welcome to my HOME friends! Here we are into the month of October and I think most of us may be spending more time in the kitchen these days. I know I am.

As I shared at my tea party this week, I had made an Apple Upside Down Cake with Vanilla Sauce.
It was my mother's recipe and I presume, her mother's recipe. Hope you enjoy it!


It starts with a Cottage Pudding batter then it is poured over an apple base.

Apple Base

Begin by melting 3 TBSP butter in bottom of 8" pan. Sprinkle with 1/2 cup brown sugar. Slice 3 apples {I used 2 Cortlands and 1 Granny Smith} over the sugar mixture.

Cottage Pudding

Cream: 1/3 cup shortening
3/4 cup sugar
Add: 1 large egg
1 tsp vanilla
Beat until light and fluffy.

Sift together:
1-3/4 cup flour
3 tsp baking powder
1/2 tsp salt
Add to creamed mixture alternately with 3/4 cup milk. Beat well after each addition. Pour the  batter over the prepared apples and smooth to the edges of the pan.
Bake @ 350 degrees for 35-45 minutes.
Serve warm with vanilla sauce or whipped cream.

Vanilla Sauce/Brown Sugar Sauce
1 cup brown sugar
3 TBSP flour
1/2 tsp salt

Gradually stir in 2 cups of boiling water.
Bring to a boil and cook until smoothly thickened, stirring constantly.
Remove from heat and stir in 2 TBSP butter
1-1/2 tsp vanilla
Yield- 2 cups


This is a lovely dessert for family or company.
