Rhubarb-Oatmeal Muffins
Makes 12 muffins:
1 cup buttermilk
1 large egg
1 tsp. vanilla
1/2 cup vegetable oil
2 -1/2 cups flour
1-1/4 cups packed brown sugar
1 cup quick-cooking oats
1 tbsp. grated orange zest
1 tsp. baking soda
1 tsp. salt
2 cups chopped fresh rhubarb
In a medium bowl, whisk together buttermilk, egg, vanilla, and oil. In a large bowl, combine flour, sugar, oats, orange zest, baking soda, and salt. Make a well in the center; pour in egg mixture and stir just until combined. Stir in rhubarb. Immediately spoon batter into 12 greased muffin pans. Sprinkle a little brown sugar on top of each muffin before baking. Bake in oven preheated to 350, for about 30 minutes. Cool muffins in pans for 5 minutes, then remove to cool completely on wire rack. Store loosely covered with foil. Makes 12 {although I often get 14 out of the batter}.
