What do you do with your left overs from a Canadian Thanksgiving? Well, I make cold and hot sandwiches, and a yummy casserole from the turkey.
But what about all that cranberry sauce? I make my own cranberry sauce and I would rather not freeze it so yesterday I made a pan of Cranberry Squares for last night's Bible Study.
Take any crumbly oatmeal recipe for date squares and subsitute the dates with cranberry sauce.
Here is the recipe I use-
CRANBERRY SQUARES
MIX- 1 1/2 cups each rolled oats, flour, brown sugar, and 1 tsp. baking powder.
Blend in 3/4 cup of butter until mixture is crumbly.
PRESS two thirds mixture into a 9" pan. Top with 1 cup of cranberry sauce.
Sprinkle remaining oat mixture over the cranberries.
BAKE at 350 degrees for 30 minutes. Let cool completely. Cut into squares.
