Rhubarb-Strawberry Crumble

Hello everyone! I hope you are all having a lovely week. This time of year we like to take advantage of the weather and the fresh produce available. For those of us who like rhubarb, we are using this wonderful red vegetable/fruit for many desserts.

I made a Rhubarb-strawberry crumble the other day and this is my recipe for it.


Grease a 8x8 inch pan. I always use coconut oil because of its health benefits.

Cut up 3 cups of rhubarb and 1 cup of strawberries and combine with 1/3 cup of brown sugar in the baking dish.



Crumble

2/3 cup flour
2/3 cup oats
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup soft butter

Preheat oven. Cover bottom of baking dish with the fruit and sugar mixture.
Combine flour, oats, brown sugar, cinnamon, nutmeg and salt together in a bowl. Cut butter into dry ingredients with a pastry blender or two forks until the mixture is crumbly. Sprinkle the topping evenly over the fruit and bake in a 375 degree oven for about 30 minutes. Yield: 6-8 servings


Serve warm, plain or with ice cream or whipped cream.
