Happy weekend everyone!
For those of you who read my post earlier you know that I made butterscotch sauce this week for a treat. I thought some of you may like to have the recipe. This is a very old recipe from a Purity Cook Book. Don't you love vintage recipes?
I usually make a sweet for tea time but this week I thought this would be nice for a change.
Butterscotch Sauce
In a saucepan, combine
1-1/4 cup lightly packed brown sugar
3/4 cup corn syrup
1/4 cup butter
Bring to a boil over medium heat, stirring constantly.
Cook, without stirring, until a drop forms a soft ball in cold water {232 degrees F on candy thermometer}. Be careful not to overcook the syrup. Remove from heat and cool to lukewarm.
Blend in
1/2 cup cream
1 teaspoon vanilla
Cool.
Makes 2 cups. Refrigerate after it cools.
Pour over your favourite ice cream and enjoy! I actually think it would be scrumptious over a white cake too.
