Spider Cookies

Happy Weekend sweet friends! After the snow storm we had yesterday, which blanketed us with more centimetres of the white stuff, it is bright and beautiful but quite cold outside. I am so thankful that Hubby arrived home from work before it got really treacherous out there!

Yesterday I promised you my recipe for Spider Cookies. I would imagine most of you have made these or grown up eating them. My children grew up on them and they still love them as does my hubby. Hubby always likes to have a cookie with his tea.



Spider Cookies

2 cups sugar
1/2 cup milk
1/2 cup butter/margarine
7 TBSP cocoa powder
dash of salt
1/2 tsp vanilla
3 cups oatmeal
1 cup flaked coconut

In a saucepan, combine sugar, milk, butter, cocoa, and salt. Heat to boiling, stirring frequently.



When it has reached a rolling boil, lower heat and cook for 4 to 5 minutes, stirring constantly.

Remove pan from heat and mix in the vanilla, oatmeal, and coconut.



Drop by spoonfuls onto waxed paper. Be sure to work quickly. Let cool. Store in an air tight container.

Yield about three to four dozen. These cookies freeze well too.
