Good morning friends~ It's a beautiful day here on PEI. I hope it's nice where you are too. This week for Tea Time I shared a pink post for Breast Cancer Awareness. If you would like to see it, please check out my previous post below this one.
Today I'm sharing the recipe for my cranberry apple crumble. The majority of the recipe comes from A Guide to Good Cooking but I have added the cranberries and it turns out very well. I'm sure you often experiment with your recipes too.
Cranberry Apple Crumble
Prepare 8 inch baking pan by greasing with butter or coconut oil.
Peel and slice 4-5 apples. I used 5 Granny Smiths.
3/4 cup of cranberries, fresh or frozen
1/2 cup brown sugar
1 Tbsp lemon juice
Blend apples, cranberries, brown sugar, and lemon juice.
Crumble Topping
2/3 cup flour
2/3 cup quick oats
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup soft butter
Preheat oven to 375 degrees. Combine flour, oats, brown sugar, cinnamon, nutmeg, and salt. Cut in butter until the mixture is crumbly. Sprinkle the topping over the fruit and bake about 30-35 minutes. Serve warm plain or with whipped cream or vanilla ice cream. Serves 6-8. Enjoy!
This makes a nice comfort food for company as well as family.
