Ginger Muffins

Hello everyone~ What a beautiful day we are having here on the Island! The grass is getting thick and green and will need cutting soon. I love this time of year!


For tea time this week I served Ginger muffins and promised to share the recipe. These are moist and just like mini gingerbread cakes. Yummy! Hope you will give them a try.



Ginger Muffins
1/4 cup butter
1/4 cup sugar
1 egg - I used an extra large egg
1/2 cup molasses
1/4 cup hot water

1-3/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves

1/4 cup hot water

Combine butter, sugar, egg, molasses and the 1/4 cup of hot water in a mixing bowl. Beat together well.

Meaure next six dry ingredients into the same bowl and stir together.

Gradually stir in the last 1/4 cup of hot water into the batter. Fill greased muffin tins 3/4 full. Bake in 400 degree oven for 20-25 minutes until toothpick comes out clean. Cool in pan for 5 minutes, then remove. Makes 1 dozen muffins.  ~ From a wonderful cook book, Company's Coming.

These muffins are wonderful with just butter or with whipped cream and lemon curd.
